Inspector’s comments: The person in charge is unable to demonstrate knowledge; employee observed not washing hands before donning gloves; drinking cup without cover was observed in food preparation area; drinking cup without cover was observed in food preparation area; opened package of sliced ham is improperly date marked, thrown away; 3-bowl sink is visibly soiled; mixer is visibly soiled; flour bin is visibly soiled, thrown away; butter container is visibly soiled, thrown away; hood has dust hanging down above food; the 3-bowl spray hose is inside sink; handwashing sink is not conveniently located for easy access to food employees. Inspector’s comments: The person in charge is unable to demonstrate knowledge; employee observed not washing hands before donning gloves; drinking cup without cover was observed in the kitchen area. Half eaten plate of scrambled eggs on food prep counter at front line; Observed cross contamination: cracked raw eggs stored above ready to eat food, thrown away; opened containers of ready to eat food are improperly date marked; can opener blade is visible soiled; steam kettle drain valve is visibly soiled; utensils in manual warewashing operation are not exposed to the sanitizer for the required amount of time.

Zheng’s China Buffet, 5707 MacCorkle Ave.: 8 critical violations. Inspector’s comments: Drinking cup without cover was observed in food preparation area; chicken in cooler 46 degrees F, cooler not working; chicken in cooler 86 degrees F, thrown away; garlic and oil 82 degrees F, thrown away; plastic bins holding food are not food grade bins; can opener blade is visibly soiled; vegetable containers are visibly soiled; in-use knife is visibly soiled.

Graziano’s Pizza, Riverwalk Mall, South Charleston: 7 critical violations. Inspector’s comments: The person in charge is unable to demonstrate knowledge. Person in charge took class and passed test. Still 6 critical violations; employee observed not washing hands after drinking from open cup and before serving food; meatballs cooling on counter 110-degrees F. Placed container in an ice bath; pasta salad on salad bar 55-degrees F. Threw away added ice water; iced tea nozzle is visibly soiled; slicer is visibly soiled; used plastic wrap from delivery carton is used to cover food.

Hawaiian Grille, Charleston Town Center Mall: 7 critical violations. Inspector’s comments: Food in Loboy Refrigerator being held at 43; no date mark on ready to eat food in walk-in; pipes in hood are visibly soiled; food containers are visibly soiled; handwashing sink in food preparation area blocked; evidence of pests as demonstrated by live roaches observed on ice maker; chemical spray bottle does not bear a manufacturer’s label. Upon a follow-up inspection on May 5, the restaurant received no critical violations.
